Cheesy Chicken Empanada Recipe
We have mastered a chicken empanada recipe that is fantastic!
You have probably heard of a beef empanada, but not very often do you see them made with chicken. Our chicken empanada recipe is cheesy and packed full of flavor!
What you need:
One recipe of empanada dough, we use Laylita’s recipe
- 1 boneless skinless chicken breast
- 1 small yellow onion, diced
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 2/3 cup shredded pepperjack cheese
- Pinch Salt & Pepper
- Olive Oil
- Frying oil (we use Canola)
What to do
Prepare the dough per Laylita’s instructions and set aside.
Heat a skillet drizzled with olive oil over medium heat, sear the chicken breast and cook until juices run clear.
Remove the chicken breast. Let it rest for about 5 minutes. Cut into large chunks and place in a food processor.
Pulse until finely chopped. Remove the blade from the food processor, add the onions, cheese and seasonings.
Fill your empanada dough, fold over and crimp along the edges.
Heat frying oil to 325°. Fry until golden brown. Drain on a paper towel. Serve with salsa and sour cream!
Pre heat the oven to 425°
Drizzle a sheet pan with Olive Oil
Fill dough and crimp edges
Bake for 15 minutes , flipping halfway through until golden brown and crispy
